Description

This refreshing Caprese Pasta Salad combines whole grain pasta with classic Caprese ingredients for a delicious and healthy dish. Perfect as a side or light meal!


Ingredients

  • 8 oz whole grain pasta (such as penne or rotini)
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Sea salt, to taste

 

  • Freshly ground black pepper, to taste

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
  • Combine Ingredients:
    • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, mozzarella balls, and torn basil leaves.
  • Dress the Salad:
    • In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, sea salt, and black pepper. Pour the dressing over the pasta salad and toss to combine well.

 

  • Serve:
